Written by Sierra Mattair (Features Writer) It’s hard for people to be stuck inside their houses with nothing to do. Not being able to go out to eat at your favorite restaurants is especially hard. However, you can make the most of your “shelter-in-place” by making delicious food. Not only does it keep you busy, but it also satisfies your hunger. Here are a few tasty and easy things to make while you’re stuck at home.
First off, breakfast; the most important meal of the day. The first recipe is avocado toast. You will need an avocado, sourdough bread, salt, pepper, and red pepper flakes/hot sauce (optional). First, you put a slice of bread in the toaster. When that is finished, spread your desired amount of avocado on the slice of bread. Then add salt and pepper. Lastly, if you want some spice, you can add some red pepper flakes or hot sauce. Another breakfast item you can make is a smoothie. First, you need about two cups of liquid to put into the blender. You can use either water, juice, or milk. Next, you add fruit. You can add two-four cups of frozen or fresh fruit of your choice. Then, depending on the texture you want, you can add yogurt or ice. You can also add a tablespoon of chia seeds to add some more nutrition.
Next is lunch. The first thing you can make is a yogurt parfait. You will need yogurt, berries, and granola. Just make yourself a bowl of yogurt and then pour in your berries and granola. You can also add other things like chocolate chips, dried coconut, or honey. Next, you can make a sandwich. There are many kinds of sandwiches you can make but here is an example of three different ideas you can use. The first option is just a traditional peanut butter and jelly. However, you can switch it up by using different kinds of jelly or a peanut butter substitute like almond butter. Option number two is a banana, peanut butter, and Nutella sandwich. You put Nutella one slice of bread, peanut butter on the other, slice up some banana to put inside, and put it all together. Lastly, you can do a lettuce, avocado, tomato, and bacon (or vegetarian bacon) sandwich.
For dinner, you can make a burrito. You will need beans, rice, cheese, avocado, beef (or vegetarian beef), and salsa. These ingredients can vary based on what you like, but the flavors go very well together. Another idea is pasta. You can use any type of noodle you like and boil it in water. When it’s done cooking, add either a tomato sauce, white sauce, butter, or olive oil. Then top it off with parmesan cheese. You can also make some toast with butter and add garlic to add a little more to the meal.
Lastly, is dessert. To keep it easy you can make cookies. To keep it easy, chocolate chip cookies are a good choice. For this recipe, you will need; one cup of softened salted butter, one cup of white sugar, one cup of light brown sugar, two tsp of vanilla extract, two large eggs, three cups of all-purpose flour, one tsp of baking soda, ½ tsp of baking soda, and two cups of chocolate chips. First, preheat the oven to 375 degrees Fahrenheit. In one bowl mix together the flour, baking soda, and baking powder. In a different bowl, mix the butter and sugar, then beat in the eggs and vanilla. Then add your flour ingredients, mix, add your chocolate chips, and mix again. You can freeze some of the dough for later if you like or you can make it all. Finally, you make the cookie dough into balls and place them on a parchment paper-covered pan. Cook for eight-teen minutes, cool for two minutes, and enjoy!
