These recipes are super simple, fun, and easy! Recipes include Halloween Marshmallow Pops, Bloody Halloween S’mores, and Bloody Red Velvet Cheesecake Brownies, all Halloween themed due to the close proximity this holiday is.
First, the Marshmallow Pops, you will need, 12 large marshmallows, one 10-ounce bag of candy melts, an assortment of sprinkles, some lollipop sticks, a cookie sheet, parchment paper, and food coloring (optional.) Then line a cookie sheet with some parchment paper (wax paper,) melt the candy melts according to the instructions, and add food coloring if wanted. Working with one marshmallow at a time, dip the marshmallow in the melted candy and allow the excess to drip back into the bowl, then immediately coat with your sprinkles. Placing the marshmallow on your prepared cookie sheet until the candy coating is set. Then repeat with the remaining marshmallows.
Second, we have some Bloody Halloween S’mores. All you need is some graham crackers, marshmallows, Hershey’s chocolate, and some red cookie icing. Melt half a chocolate bar and one marshmallow on top of half of a graham cracker. You can do this in a microwave for just a few seconds or in an oven on broil. Cool for a few moments and gently push the marshmallow down, and drizzle the red icing on top. Top with the other half of your graham cracker and enjoy your delicious and spooky dessert.
Lastly, we have Bloody Red Velvet Cheesecake Brownies. Since the cheesecake and brownies are separate recipes, for the brownies you need: one stick unsalted butter, melted, one cup of sugar, 1/4 cup unsweetened cocoa powder, 1/2 teaspoon vanilla extract, one tablespoon red food coloring, 1/8 teaspoon salt, 1/2 teaspoon white vinegar, two eggs, and lastly 3/4 cup all-purpose flour. For the cheesecake part you need: one (8 ounces) package cream cheese, which should be softened, three tablespoons sugar, 1/2 teaspoon vanilla extract, and one large egg yolk.
Now for those instructions to the Bloody Red Velvet Cheesecake Brownies, line an 8×8 inch baking pan with wax paper and grease it with butter. Then in a large bowl, combine the melted stick of butter with the sugar, cocoa powder, vanilla, food coloring, and salt, combine them by stirring. Then stir in the white vinegar. Whisk together the eggs in a small bowl, and then stir them into the brownie batter. Fold in the flour, just until combined, then pour the batter into the prepared pan, reserving 1/4 cup of the batter for the topping. In the bowl of a stand mixer or use a handheld electric mixer, blend together the cream cheese, sugar, vanilla, and egg yolk until well combined. Spread the cream cheese mixture in an even layer over the brownie batter then top the cream cheese with dollops of the remaining brownie batter. Using a sharp knife or toothpick, swirl the cream cheese together with the dollops of brownie batter. Bake the brownies for 30 minutes. Remove them from the oven and let them cool completely before lifting the parchment out of the pan then slicing and serving.
The Bloody Red Velvet Cheesecake Brownies take a bit more time, but other than that the ideas can take less than fifteen minutes. The Marshmallows are so perfect for Fall and Halloween. Though all three recipes have simple ingredients, they are perfect to make on a lazy Sunday!
