FoodNetwork – Gingerbread Cookie Recipe

Foundation:

– 1 ½ sticks of butter (softened)

– 1 ⅔ cups of sugar

– 1 Orange, zested

Dry Ingredients:

– 4 cups of flour

– 1 ½ teaspoons baking powder

– ½ teaspoon baking soda

– 1 table of ground dry ginger

– ½ teaspoon ground nutmeg

– ½ teaspoon ground allspice

– 2 teaspoons ground cinnamon

– ¼ teaspoon ground cloves

– ½ teaspoons kosher salt

Wet ingredients:

– 2 eggs

– ½ cup of dark molasses

– 1 juiced lemon

Steps:

1. Preheat oven to 350 degrees F

2. With an electric mixer add butter, sugar and orange zest and beat until smooth for 5-8 minutes

3. In a medium bowl mix add all dry ingredients

4. In another bowl mix all wet ingredients

5. When the butter and sugar are integrated, lower the speed of the mixer and add the dry ingredients. Add the egg mixture and when blended, remove the bowl from the machine.

6. Divide the cookie dough in half. Press the first half of the dough in between 2 sheets of waxed paper or plastic wrap and chill for 15 minutes. Repeat with the second half.

7. Lightly flour a flat surface. Use a floured rolling pin to gently roll the first half of the dough about 1/2-inch thick. Lightly flour the cookie cutter(s) and cut the shapes

8. Use a metal spatula to gently transfer them, cookie by cookie, (the cookies should be similar size) to a baking sheet. Repeat with the other half of the dough and transfer them to another baking sheet. Leave room between cookies

9. Bake until brown around the edges, 8 to 10 minutes.

FoodNetwork – Banana Bread Recipe

Ingredients:

– 1 cup granulated sugar

– 8 tablespoons (1 stick) unsalted butter, room temperature

– 2 large eggs

– 3 ripe bananas

– 1 tablespoon milk

– 1 teaspoon ground cinnamon

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1 teaspoon baking soda

– 1 teaspoon salt

Steps:

1. Preheat oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan

2. Mix the sugar and butter and butter until light a fluffy and then add the eggs

3. In a small bowl mash the bananas with a fork and mix in the milk and cinnamon

4. In another bowl mix the flour, baking powder, baking soda and salt

5. Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears.

6. Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing.

7. Spread slices with honey or serve with ice cream
